If I’m being completely honest, it’s REALLY hard to duplicate some of my favorite sweet treat recipes in a healthy-ish manner. That’s why I was just tickled to stumble upon this healthy chocolate chip cookie recipe that ACTUALLY not only is on par with unhealthy chocolate chip cookies out there, but might even SURPASS them.
I know, I know, you’re probably thinking that’s just not possible, but I promise the proof is in the pudding (or in this case, cookies;-), friends! I adapted the recipe from the cookbook PlantYou, and I have requests from everyone in my house (including my husband, who most definitely is the biggest junk food lover of us all!) to make them all season long. These cookies will be used for tea time, in tins for neighbors for holiday cookie swaps, and even as a special snack for my son’s first grade class. Whip up a double batch and enjoy!
Tahini Chocolate Chip Cookies
1/2 cup tahini (drippy, not dry)
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract
1 cup spelt flour
1/2 teaspoon baking powder
1/4 cup dark chocolate chips or cacao nibs
flaky salt, for sprinkling
Pre-heat oven to 400 degrees. Mix everything together (sans the salt), and roll into 8 big balls of dough on a baking sheet. Squish the dough down into a thick disk. Top with more dark chocolate chips and flaky sea salt. Bake for 12 minutes. Dunk in milk and savor!:-)
A Little Something Holistic Health
In Ayurveda, our digestive fire is known as “agni”. There’s a great quote by the famous Ayurvedic Doctor Dr. Lad, who says: “If you don’t have good agni, you’re in agony”, which I think speaks SO much about how important our digestion is to our overall health.
An important thing to note that I’ve learned in my Ayurveda Health Counselor training is that we not only digest all the food we eat, we also have to digest each and every sensory experience we have. And in 2022, wow, that can be a lot! From the morning news you consume to the sound of traffic and honking on the streets to the information that is coming at your from your phone to the texture of clothing that is rubbing up against your body throughout the day to the smell of cleaning products we may not even know we’re inhaling…holy moly. This really made me take pause and think: “how can I improve my sensory intake—or perhaps even lessen it? how can I make sure what I’m consuming is enhancing my life, not overwhelming it?”
I encourage you to think about your daily sensory intake, too, and ponder these questions. I’d love to hear your thoughts on how your sensory experience is being digested!
