Today I’m sharing with you one of my FAVORITE healthy cookie recipes tried to date that are absolutely perfect for the warmer weather months—Thumbprint Cookies. These are filled with good-for-you ingredients, and honestly taste better than the junky alternatives. My kids will finish a batch in one sitting, no joke. If you do happen to have leftovers, go ahead and store in the fridge for optimum freshness.

Thumbprint Cookies
1 1/2 cups almond flour
1/2 cup oats
1 teaspoon baking powder
1/4 cup maple syrup
1/4 cup extra virgin olive oil
1 teaspoon vanilla
sprinkle of cinnamon
sprinkle of cardamom
100% fruit jam, for filling
Directions
Preheat oven to 350.
Combine all ingredients (sans jam).
Roll into little balls on a lined baking sheet, then use your thumb to create an indentation on the top of each cookie.
Spoon in a dollop of jam on top of each cookie.
Bake for 12 minutes.
A healthy tip for the jam filling: mash up whatever berries you have on hand with chia seeds. I used raspberries here and they turned out fabulous! Unfortunately most store bought jams are packed full of sugar, which would derail the healthy part of these cookies;-)

A Book Recommendation
I recently finished the book Lillian Boxfish Takes A Walk, and what an absolute joy it was! The story is a love letter to New York City at its core, but also delights in all the cozy moments one has over a lifespan of 84 beautiful years. The main character, Lillian Boxfish (the respective 84 year old heroine), strolls around 10 miles of NYC one evening, and her chance encounters with fellow New Yorkers are absolutely darling, and will leave you with a renewed faith in humanity. The flashbacks to different pivotal moments of her life are both gutting and glorious—much like our actual lives, right? Here’s a small passage I loved:
No one survives the future, of course. Over the years I have rushed it, run from it, tried to shunt myself from its track. That these efforts did not succeed does not mean that I regret them.
