A Scrumptious Yet Healthy Chocolate Pudding
...your new staple for breakfast, tea time, and dessert!
For the past few years, I’ve been on the hunt for dessert recipes that can also fall into the category of healthy. As I shared here, my son has diabetes, so it’s important to me that I model and teach him (and all the kiddos, really) the art of enjoying food while also nurturing yourself. To me, this is the marriage of Hygge and Ayurveda in the kitchen…pure enjoyment + nourishment.
I’ve tried lots of recipes over the course of this journey, and I’ll be real, there’s been more misses than hits. So when I came across one that was an instant hit with all three kids and their two adults, I knew I needed to share here.
I call this Ooey Gooey Chocolate Pudding. It’s perfect for breakfast, tea time, or a special dessert after any meal! Here’s what you need:
Ooey Gooey Chocolate Pudding
1/4 cup cacao powder
5 tablespoons maple syrup
1/2 teaspoon vanilla
1.5 cups milk (I use oat milk but you do you!)
1/2 cup chia seeds
Combine all the ingredients and let chill in the fridge for a few hours until firm. It will keep for 5 days, so you have an easy go-to dessert whenever the need for something sweet arises. You can get extra fancy and top with coconut whipped cream, raw cacao nibs, or dried (edible) rose petals.
Chia seeds are loaded with antioxidants and are also said to reduce blood sugar levels (which is a main reason I try to incorporate them into dishes each week.) Cacao has loads of benefits as well, namely it’s said to improve cognitive function, supports the gut, and improves the quality of your sleep. As if you needed more reasons to load up on ooey gooey chocolate pudding, friends!
